Ingredients

- 1 pack Country Victualler pork belly ribs (600g / 4 ribs)
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp brown sugar
- 1 tbsp cider vinegar
- 1 garlic clove (grated)
- 1 tsp smoked paprika
- 1 tsp chilli flakes (optional)
- Fresh cucumber, shredded carrot, spring onion
- Flatbreads or lettuce leaves for wrapping
Method
- Preheat oven to 160°C (or prepare BBQ for indirect heat).
- Mix soy, honey, sugar, vinegar, garlic, paprika, and chilli to create a glaze.
- Coat ribs generously and place in foil.
- Cook low and slow for 1.5–2 hours until tender.
- Unwrap, brush with extra glaze, and finish under grill or BBQ flame for caramelisation.
- Rest briefly before slicing or pulling apart.
