Ingredients

  • 1 pack Country Victualler pork belly ribs (600g / 4 ribs)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp cider vinegar
  • 1 garlic clove (grated)
  • 1 tsp smoked paprika
  • 1 tsp chilli flakes (optional)
  • Fresh cucumber, shredded carrot, spring onion
  • Flatbreads or lettuce leaves for wrapping

Method

  1. Preheat oven to 160°C (or prepare BBQ for indirect heat).
  2. Mix soy, honey, sugar, vinegar, garlic, paprika, and chilli to create a glaze.
  3. Coat ribs generously and place in foil.
  4. Cook low and slow for 1.5–2 hours until tender.
  5. Unwrap, brush with extra glaze, and finish under grill or BBQ flame for caramelisation.
  6. Rest briefly before slicing or pulling apart.
