Ingredients

- 2–3 chicken breasts, diced
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tbsp plain flour
- 400ml chicken stock
- 150ml double cream
- 1 tsp Dijon mustard (optional for depth)
- 300g pasta (penne or rigatoni)
- 100g grated cheddar or mozzarella
- 1 tbsp olive oil
- Salt & black pepper
- Fresh parsley to finish

Method
- Cook pasta until just al dente, then drain and set aside.
- Heat oil and butter in a pan, add diced chicken and cook until golden.
- Add garlic and cook for 1 minute until fragrant.
- Stir in flour, then gradually add chicken stock to create a smooth sauce.
- Pour in cream and Dijon mustard, simmer gently until thickened.
- Combine sauce with pasta and mix well.
- Transfer to an oven dish, top with cheese, and bake at 180°C for 15–20 minutes until golden and bubbling.
