Ingredients

  • 2–3 chicken breasts, diced
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 tbsp plain flour
  • 400ml chicken stock
  • 150ml double cream
  • 1 tsp Dijon mustard (optional for depth)
  • 300g pasta (penne or rigatoni)
  • 100g grated cheddar or mozzarella
  • 1 tbsp olive oil
  • Salt & black pepper
  • Fresh parsley to finish

Method

 

  1. Cook pasta until just al dente, then drain and set aside.
  2. Heat oil and butter in a pan, add diced chicken and cook until golden.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in flour, then gradually add chicken stock to create a smooth sauce.
  5. Pour in cream and Dijon mustard, simmer gently until thickened.
  6. Combine sauce with pasta and mix well.
  7. Transfer to an oven dish, top with cheese, and bake at 180°C for 15–20 minutes until golden and bubbling.
