Ingredients

Toad in the Hole Ingredients

  • 8 premium Country Victualler sausages
  • 140g plain flour
  • 4 large eggs
  • 200ml whole milk
  • 1 tsp English mustard
  • 2 tbsp beef dripping or vegetable oil
  • Sea salt and cracked black pepper
  • Fresh thyme (optional)

For the Onion Gravy

  • 2 large onions, sliced
  • 1 tbsp butter
  • 1 tbsp plain flour
  • 500ml beef stock
  • 1 tsp Worcestershire sauce

Method

  1. Preheat your oven to 220°C (200°C fan).
  2. Whisk together the flour, eggs, milk and mustard until smooth. Leave to rest for at least 15 minutes.
  3. Add the oil or dripping to a large roasting dish and place in the oven until hot.
  4. Carefully add the sausages and roast for 15 minutes until beginning to colour.
  5. Pour the batter around the sausages and immediately return to the oven.
  6. Bake for 25–30 minutes until the Yorkshire pudding is risen, crisp and golden brown.
  7. Meanwhile, prepare the gravy by gently frying the onions in butter until soft and caramelised.
  8. Stir in the flour, cook for one minute, then gradually add the stock and Worcestershire sauce.
  9. Simmer until thickened and rich in flavour.
  10. Serve immediately with plenty of onion gravy.
