* Rub your lamb with salt, pepper, olive oil and a spoonful of chilli jam for a hint of sweetness and heat.

* Roast at 180 degree C ( Fan 160 ) for 1 hour and 30 minutes for a perfect medium-rare, adjusting for your preferred doneness.

* Rest for 15 minutes before carving to lock in all the delicious juices.
